Check out Swans. They started out as no-wave, then became a more gothic noise rock band, then became post-rock. Soundtracks For The Blind is their post-rock magnum opus, but it’s worth just listening through their whole discography

Yeah, so, post-rock isn't even a descriptor for a sound, much less a genre. It was just some term a critic came up with while talking about the album Hex, and it was more about the ambition of the band. It's kind of like saying 'experimental', except that it was sort of experimental rock that was very much bound by scene and had a lot of influences influencing each other by way of sharing band members. And that's all.
It is most definitely not a sound as you'd find by sorting through the hundreds of bands with this tag attached to them. I'm talking about the earlier ones, because as with many things, this term now HAS been associated with a particular sound, with the more popular bands from the 90s playing a huge role in this streamlining of the scene.
So there's a lot of confusion, especially these days, when discussing post-rock as how the term is used can vary wildly depending on the context. There's even a classification of the thing into waves, like First Wave and Second Wave and such.
So, I personally think you shouldn't really care about whether something is or isn't post-rock, as even a big-brained fellow like me can't tell at times.

Set Fire to Flames took the alternative route suggested by F#A# and made 2 records that dealt much more with collage than crescendo. They're well worth your time.

You're wrong about Tortoise, though. TNT and Lazarus are a bit more complex and idea-dense than Millions, and parts of S/T come close to and occasionally trump it when it comes to focus and structure. It's really close, I don't know how you can say they all just suck.

The Mercury Program is great if you like vibraphones. A Data Learn the Language in particular.

They aren't desu, they both just push more varied instrumentalism but compositionally Millions is by far superior, basically the pinnacle of minimalist rock

I can see why someone would like tortoise, but its just not my thing. It just sounds so full of itself and quirky in a retarded way. TNT had some nice moments (especially the drumming), but it feels very hollow to me. It gets worse later in their carreer, especially with their latest record ( i feel genuinely offended by the catastrophist).
I like plenty of jazz and jazz-rock records (where this is taking influence from), but somehow post-rock and jazz dont work in my head I guess :)

Ive given this one a listen already, its not bad but its a little meh imo

Ive listened to Sigur Ros and i honestly didnt like it. Also young team is the one i started on for Mogwai and i really liked that album.

Ive seen their album covers in threads here before but i have yet to actually give them a listen. I'll be sure to do that.

I remember my friend tried getting me into swans back when the only album i listened to that wasnt just current shit-core stuff was ITAOTS (yes i know...). We listened to To Be Kind together, but back then my palate for music was so baby-ish that I just got completely turned off by it and havent decided to give them another go since then. I think now im ready for that second go though after listening to soundtracks for the blind last night, i really enjoyed that album.
