I've been trying to cut back on sodium and foods high in cholesterol lately, as well as foods that trigger acid.
I follow the "eat whatever you want" diet and exercise enough to stay in shape, working out alright.

Fiber is king. Eat whatever to a point, you still want to eventually get the correct minerals into your body... vitamins are easier because they are typically put in things to make up for some peoples unbalanced diet.
To avoid colon and stomach problems later in life, eat plenty of fiber though.

Made the switch 4 months ago feeling great was super easy, there's vegetarian options now that are pretty affordable and not bad. Little patties that taste like cafeteria burgers and chicken nuggets etc but aren't creature.

I can only ever eat meat. I'm 32 and the last time I ate veg was when I was 5. If I eat veg now I get violently ill. It works for me quite well, I have no serious health complaints but I would recommend anyone else try it.

I tried various diets and because I'm diabetic and lift real heavy and record my results several times per week I get to see basically all the effects in real time of all the popular diets
Basic consensus is that low carb is great if you're diabetic but otherwise shit for lifting, but most people on Yea Forums are lazy worthless shits so most dietary changes aren't going to make a big difference either way
Keto specifically is shit for gains because it's limited in both carbs and protein, but it's fantastic for losing glycogen weight (up to 2kg in most people) along with cutting out salt, and creatine it makes a huge difference for quick loss

Listen OP fad diets don't actually do anything. Losing weight is a numbers game. You need to eat less calories than your body uses up in a day to lose weight. If you eat more calories than your body uses in a day then you're going to gain weight. Any results gotten from these kinds of diets are because the change in eating habits resulted in less calories than the body uses in a day being consumed. You can't just eat a bunch of berries or only certain kinds of meat and expect results. You have to be aware of your calorie intake, macro-nutrients that are grams of carbs, fats, and protein, as well as micro-nutrients like vitamins and minerals. There are some apps, like MyFitnessPal off the top of my head, that can calculate these things for you.
For it to work you have to stick to eating under your caloric intake and when at your goal eating as close to your maximum intake as possible to maintain. This has to be an every day thing for it to truly take effect and works best in combination with exercise like going to the gym at-least three times a week for at-least an hour.
Fad diets almost never work because it's rare for people to stick to them, for genuine results you have to embrace eating right as a lifestyle change. Cooking your own food at home makes this much easier, as restaurants and fast food will almost certainly put you well over your intake limit. If you eat under your calorie goal but eat 50 grams of carbs over your intake limit then your body is going to store that as fat and as a result you won't get very effective results.
Don't fall for fads. There are much more practical and efficient ways of doing things.

You're over simplifying what I said, it's more than your calorie intake. I stated quite clearly that you have to be aware of your macro-nutrients aswell or eating under your caloric intake isn't going to do much as that will still be stored as fat. This inherently means that what you put in your body very much does matter, as say a greasy burger from a fast food joint may be within a calorie limit but almost certainly is going to push you over your carbohydrates for the day, resulting in more fat being stored on your body.
