Dark Souls 2: Scholar of The First Sin is the hardest souls game. It's janky, and the devs like to constantly put you into uncomfortable bullshit situations. It feels like a kaizo romhack half of the time.

Elden Ring would be hardest if they weren't so insistent on turning the player into an isekai protagonist.
Playing a standard knight in this game is pretty tough. Too bad there's literally fuck-all reason to do that though.

Sekiro has a learning curve, but then becomes easy since deflects are broken.
Bloodborne has a learning curve, but then becomes easy again.
Dark Souls 3 is easy because of super lenient health, stamina, dodges, and i-frames. and exploits.
Dark Souls 1 is easy because of poise, parries, backstabs, and exploits.
Demon's Souls is easy because of exploits and being mostly gimmick bosses.
