Hori Switch Split Pad Pro is mandatory to use the Switch in handheld mode. The joycons haven't been attached to my switch since I bought it. It's either docked, or the Hori controls are on.

You could get a gooseneck tablet holder so you can lay down and play vidya with your arms limp on your side each holding a joycon, the apex of gaming laziness.
That and pro controller, plus maybe a stand for when you play with friends on the go, is all you really need.
A flipgrip is handy if you wanna emulate DS games.
