The closest I can come to is "consistent" and that's still fairly subjective. Something is "soulless" when it loses what made the original good. So in the case of OP, Mario never quite moved in such an animated bouncy way. It's inconsistent of what we know Mario to be not just from SMB1, but from what came later too.
Another example of this is the "sonic redesign" that gets shitposted sometimes. It reduces Sonic's ability to express, and becomes inconsistent - because we know Sonic is a hedgehog with attitude.
I know this isn't objective, but that's as close as I can get. I'll think on it.
