The purpose of a translation is to take the text and put it into a form that can be understood by others. Not everyone knows enough about japanese shit to understand terms like "onmyouji", therefore using such a term is not really translating at all. It's no different from just leaving it in japanese characters and asking the reader to look the characters up themselves.
Yes, there are some things you can't properly translate, however it is best to try. Even if it is a bit inaccurate to the source material, it will get the idea across significantly better than something that the reader literally does not understand.

But I don't think it's subpar to leave it as Onmyouji. It's a thing and turning it into another thing is not a translation.

Its a thing that doesn't need to remain in the translation, its not relevant to the game's story, not relevant to the main characters of the game, and not relevant to the reader and player. So it should go away.

a lot of official tls have an in-game dictionary/glossary of terms
anything that's left untranslated because of the lack of an english equivalent should have a glossary link explaining what it means, even things that are commonly understood like miko or honorifics. the tl is for english audiences, leaving japanese words untranslated without a hint as to the meaning is basically failing at being a translator

Because JAPAN is an english word, and the original intent of calling it that was to remove it from the context of the rest of the game linguistically, which obviously doesn’t work when the entire game is in that same language.
