I played back when they looked like this. They were kind of fun back then. Probably because they could be played without a HOTAS rig, 10 years of flight training and severe autism.
If I tried a flight game again it would probably be an Ace Combat game. Those are the closest to what I want, but what I really want is a slightly more serious and realistic version of that, that doesn't yet require me to become an actual pilot and deal with all the boring shit.
I own a flight stick and I like airplanes but the idea of flying around a shitty looking earth with no real purpose isn't appealing. You need something to bridge the gap that won't water down the mechanics of you want to grab people who aren't already wanking over cockpits

they are, but they have to be severely dumbed down to not completely alienate the first time/casual user
default airplanes have unrealistic performance, handling, and reliability. Assists are all on by default to keep things from getting to difficult. Missions take place in broad daylight with clear skies, and gigantic floating flags allow users to easily find their way through the world. There's no consequences for violating airspace or flight rules.
But underneath this shallow presentation the core of the simulator is very good for a consumer product. It takes some modification and consumer intention to get the best value out of it.
Aren't there mods to fix all of that stuff you mentioned?

the genre is almost 40 years old now, there are a shit ton of mods, free and paid.
sometimes you need a mod to fix something in the some.. sometimes you can just change some text in a config file
sometimes its as easy as turning off "auto rudder" or enabling crash detection and aircraft overstress
sometimes it's just how you choose to fly.. and nothing changes within the program itself.

X-Plane 11 is probably your best bet. Ancient FSX includes a full interactive flight school and aviation articles but it's 13 year old software.. and looks and runs like it.

Yes they're all designed to function like this.. it's not the ideal solution but it is doable.
