It's going to be something to do with Shinra HQ. My bet is on the escape; the blood will be toned down or removed entirely, the elevator fights will be moved elsewhere or removed outright, and the Rufus fight is going to be fucked up somehow, probably by making the helicopter an actual part of the fight like the Guard Scorpion's wall climbing parts. And that's leaving aside the obvious point in that the final boss sure as fuck won't be Motorball, so they're going to be shoving someone else in at the end of the bike chase out of the city.
I really hope I'm wrong, but like you said; it all looks too good to be true so far.

I'm just thinking from a gameplay perspective regarding the original game; SOLDIER 1st's were just mooks by the time you fought them, but each one is twice as strong as the Motor Ball boss you fight just before leaving Midgar. Taking this into consideration, I think it's a fair assumption that Cloud overpowering Sephiroth was only intended to be a momentary burst of strength and/or a situational lapse in Sephiroth's, and not indicative of Cloud's usual state.

All of the simpler models were made when the game was originally in development for N64. When it became apparent that it wasn't going to work out (mainly because of the FMVs) they moved to PS1, and thus had more freedom to do detailed models because the game was being split into 3 discs. They did have to ditch using actual textures for most battle models though, textures are only used for small details, everything else uses goraud and vertex shading to save on vram/filesize

I have actually seen a build of this early, early version and it's very different, moving to the PS1 was a very wise decision.

The guard is pretty weird but could be useful to deflect blows away and possibly towards you. A guard should be able to trap or hold or deflect the opponent's blade away from the hand and fingers. The guard in the image is also useless when using it as some sort of a pick axe. Reverse grip (the fighter holds the blade instead of the grip as a reverse sword and uses to guard to penetrate thin steel armor since smaller surface area = more penetration) or something is a thing, look it up. The size of the sword would be problematic depending on it's weight. Sword in reality is pretty useless in a fight with enemies with full blown body armor. Spears, mace and axes are a lot better.

They do. Even got the director back as producer. The only one they didn't manage to bring back is Sakaguchi the story teller that has been missing in modern square. A writer without a good story teller or editor to guide the writing to not have it go haywire, is important. It's why manga or even books still have editors to this day because giving too much freedom to the writer, can be detrimental to the story. Or it can be vise versa. Something that has been missing in modern Square works is the grounded more believable story. New square can do bombastic epic setpiece just fine but without the grounded realism in it's story the characters just doesn't feel relatable. They somewhat tried to do this in XV. And sometime it does have that. (given how close Tabata is with Sakaguchi). But the general story got chopped up, left out because development was fucking horrendous.

All I know is that the higher ups and some bad decisions made by Tabata during development (like the insistent open world) screwed up the game and the general idea and design (not character look design) of Noctis is so retarded that anyone can't make a good game with the powers he has AND has to accommodate other party members as well. The project was a disaster from he start. And having Tabata to head it t the start of the title change never did anything. The title should've been dumped and XV should've been a brand new story instead of having the new director work on things that he didn't like. He even admittedly didn't like the main character of the game. How the hell someone can produce something when he has no passion or close relation for it. If you want to blame someone, blame those execs.
