I've never played Final Fantasy 1, 2 or 3. What are the best versions to play of each one?

The originals, on the original hardware, in Japanese, during the year of their respective release date.

No.

Hey, you asked.

No, the only way to play is repeatedly an hero until you get re-incarnated as Japanese, and then do it on the original hardware in Japanese.

PS1 Origins for FFI and II, original Famicom for III (because III has no better alternatives).

I & II - PSP
III - NES

don't even bother playing 2. It isn't worth it

Final Fantasy 1 & 2: Dawn of Souls (GBA)
Final Fantasy 3 & 4 (DS Remakes)
Final Fantasy V & VI Advance (GBA)
Final Fantasy VII (Steam version so you can mod the shit out of it)
Final Fantasy VIII Remastered (Preferably on PC as well)
Final Fantasy IX Remastered (Whatever console it's on)
Final Fantasy X/X-2 HD Remaster (Don't really play X-2)
Final Fantasy XI on PS2 or an emulator if you don't mind dead servers
Final Fantasy XII The Zodiac Age or International Zodiac System for your PS2 or emulator if you cannot afford the Zodiac Age
Final Fantasy XIV Shadowbringers: Collector's Edition
Final Fantasy XV: Royal Edition (Or just don't play it it's shit anyways)

I feel like i am missing something but can't tell what, must be my brain

You couldn't actually know if that's the best way to have played it for the first time, since you can only play it for the first time once and experience only that one version of playing it for the first time.
