Never cared much about these games aside from the artstyle, but after seeing various gameplay videos, I kinda want to try it out now.
Should I just wait for the next title at this point? It's not like they are going to continue updating the game after the last event, right?
It'll probably be a while. It was over a year between Splatoon 1's last content update and Splat2's release, and they were probably rushing to get it out since they wanted to get it on the Switch. Next game will take longer, guaranteed. That said, it doesn't matter that there are no more content updates. Another reason it will take a long time before Splat3 is that 2 is in a really good spot as a competitive game. It would be hard to add or change much without ruining it. In a way, this is the best time to get into Splatoon.
Surely Nintendo wants to turn Splatoon into a one of their big one a console games like smash, mario kart etc.?

I would expect, yeah. I don't see them coming out with an outright new console for a while, so Splat3 is probably 3 or more years away.
I expect some kind of spinoff game in the meantime though.
