I would expanding the fishing to be a lot more involved. Also it is normal for farmers to hunt in the winter when you can't produce crops, so I would add in a hunting mini game.
Besides that, just more scenes and interactions with villagers, or more events when you get married.

Hell no. That would drag on way too long, making seasons a chore to get through. I like the way Story of Seasons did it where the days progressed semi-quickly, but you could eat food that gave you a time slowdown buff.

Doraemon is a classical IP kinda like spongebob and mickey mouse. Adding romance and marriage would be an asspull. They're simply relying on dickriding the IP so rewriting something outside of the set rule on their behalf would not be a good idea.
On top of that who tf would be a plausible romance? Sakura, Doraemon's sister, and Nob's mum is the only regular female character in the series

the pure comfy nature of harvest moons world is one of the things that make it better than stardew.
i never cared about the stuff in stardew that tried to dark as i came to the game to relax and escape the problems of the real world not get invested in fictional problems.
