Has anyone else realized they like building shit in games more than actually "playing" them as games, if that makes sense? Like I don't even care if I use cheats, I just like to build stuff and make it as neat, cozy and cool as possible.

Interior design in Sims is pretty fun, almost a game by itself.
It was more acceptable to use cheats back then. Everyone used cheats in the sims

I like Original War because it's such an unconventional RTS. One of the missions is literally just build a large fully upgraded base after clearing out the trees in the area. In a later mission your base gets trashed while you're away, but it was still cool.
Stronghold is also basically that.
I wish I could be like this, in some games I don't know what to build.

the sims was originally a prototype interior design simulator that Wright populated with NPCs to interact with the houses. as he began giving them more complex behavior and interactions, the sims was born

The Sims 2 might have something close to what you're looking for.
If you have a decent rig then try out Planet Coaster. As a tycoon theme park game it's pretty bad but the amount of things the game lets you do is absurd.

Nope don't have this autism although I kinda envy you because you can make most sandbox games fun.
I already have the sims 3 but the build mode is really limited. Everything is tied to the grid system so objects are sometime either clipped or have to be spaced apart from each others.
You can ungrid objects by pressing alt I think and there's a command cheat to ignore the objects collisions

Building stuff was the only fun part of the sims.

I have the opposite problem. I enjoy building, but only if it is constrained by good and meaningful mechanics. I think I have been spoiled by Factorio. Now I can't play games like Cities Skylines, because of how loose they actually are with the mechanical constraints on what you create. It's no fun to build an interesting city if the city does not reflect mechanical necessities or impacts functionality.
for me it was making two teen redhead twins with one of them having braces and making them kiss
because the building mode in sims is pretty well made and challenges your creativity, while the living part is just a chore simulator riddled with frustrating bugs
too bad my own creativity is trash and I have to google photos of houses and copy them
In total war, turtling can be verg effective when outnumberd significantly

lol Sims 3 introduced free object placement by pressing in alt, and you can create some pretty nice stuff if you get creative with moveobjects on cheat
Sims 4 improves on 3's but also lacks a lot of good stuff 3 had. Where the fuck are my ladders and spiral staircases? Why can't I place separate foundations indoors? WHy can't I place fucking diagonal stairs?
