At the very end of the game, once you go through a point of no return, all bosses start getting party-wide elementless spells and you'll have to fuse and hunt for luster candy and debilitate to stack and not instantly die

The very end bosses, yes. Due to the unbalanced smirk system expect all (boss) fights to be smooth sailing or absolute skullfuckfests with no middle ground. It's considerably improved in Apocalypse to the point of near perfection.

it's a boss in Nocturne, named Mot, that has a skill where it can give it's self many turns and uses those turns to buff it's magic and then nuke you with an AoE spell.

That boss has a move that gives it more turns without an AI that limits how often it can use it, which means it has the chance to do shit like that. It's known as "Mot's Drama" in Japan. Mostly it's just getting fucked by RNG. It's usually not a problem most of the time.
