Honestly I'm playing it now for the first time after getting playing only Oblivion and Skyrim before. It's a bit weird getting used to the lack of way points and the chance to attack/cast, but it is actually lots of fun. I just got Umbra at level 9ish, and I'm trying to get Azura's star and enough INT to summon a golden saint so I can finally make that Necklace of Levitation with a constant effect.

OpenMW is literally all you need for engine purposes. Morrowind Patch Project supplements for bugs that are caused by errors not as a result of the engine. Tamriel Rebuilt and Morrowind Rebirth are nice if you've done everything and want to experience the game differently. Graphics mods are all optional, but if you want to make the game look a bit prettier, go ahead. I advise against mods that fundamentally change gameplay, change item value, etc.
Protip: skip the levitation and make a belt that gives you 1 point of slowfall. This will make you fall at a rate not easily discernable from normal fall speed. Level your alchemy and start making potions that boost your intelligence. The effect will continue to stack, keep making more of those as your int goes up, then make spells that give you 100 points of jump, and just use those to travel. You'll move more quickly and won't incur fall damage. You can also just make levitation potions with absurdly long duration times(several hours irl), but keep in mind you'll have to use beds to sleep.
