Is there a game that I can get fully immersed with. This is what I want.

Outward covers all of that but in a very manageable way (if you're not retarded that is), so it might not be the hardcore experience you're looking for.

This. Outward is jank as shit with some things but its what you are looking for. The combat is super iffy though.
can you give any tips on how to play it? I tried it a year or two back but didn't get far. should I choose a shelter and try to stock up there, or try to move from settlement to settlement?
Most Resources are finite, it's preferable to stay at a viable shelter until you have to move on because the food is starting to run out and stock up on materials that need a long time to dry. Hunting deer and wolves provides loads of food and materials so look for shelters that aren't too far from animals and work towards crafting clothing since the weather is the most dangerous thing in the game. When you move into new territory always pack enough supplies to survive one night outside, you will likely get lost or caught outside at night when exploring a new area.
