Is there a game that I can get fully immersed with. This is what I want
Outward covers all of that but in a very manageable way (if you're not retarded that is), so it might not be the hardcore experience you're looking for.

Came in to post this. It really is the most immersive survival sim out.

Outward. is exactly that but if you can forgive the jank then go for it
Metro, modded Skyrim
Conan Exiles, health pots exist but it takes a while before you can actually get them
I think Unreal World checks all of those, though it's 2d.
