Biological evolution. Bonus points if the author goes the extra mile and finds a somewhat plausible explanation for such evolution. Kinda like in Mass Effect with Biotic powers (it's not exactly biological evolution but it's explained in a psuedo-scientific way)

Actually Squaresoft only had the license to produce two games, so they did. Eventually the author of Parasite Eve changed publisher and they started charging much more for the game license, so Square Enix never bothered with it again.

Man i love Parasite Eve 2, specially the "small town in the desert" atmosphere and that would be something really hard to replicate in a remake. Both the Los Angeles part and Nevada part would have to be quite bigger, not to mention technology, zoomers don't even know what a payphone is and would wonder why she doesn't have an Iphone.
