The levels in Sin and Punishment 2 vary a good bit in terms of visual design, but since it's a rail shooter you're not really exploring the enviroments if that's what you're after. The two Blaster Master Zero games might be more what you're looking for though since they're metroidvania-y, and each area in the first or planet in the second is pretty distinct from the others. 2D Sonic also has pretty varied enviroments from level to level I'd say. Maybe if you look up some screenshots of those you'd find what you're looking for.

Is Night in the Woods really all that great? You've Grimrock II on there, so I'm willing to trust your taste a bit.
It has a great soundtrack and artistic direction. It's not much of a game though and whether you'll like it or not will depend on how much you can relate to the characters.
Terraria, TF2, and Mario 64 are top fucking tier.
I still need to finish Paper Mario one day, cool game though, as are Isaac and Minecraft even if I've not played them in a good while.
Shovel Knight, Civ V, and Battlefront II are good shit.
