What's the rationale behind castling anyway? I get that it protects your king better, but it also seems to give them nowhere to run if needed.

He then takes the black queen with the g2 pawn. You then fork his queen and king with your knight, but the problem is that when you take his queen, your knight gets immediately taken by the white rook on c5.

This combination does win you a pawn and black is better here, but this isn't resign worthy for white. You have something much stronger.

The board is flipped so you're looking at it from black's perspective. Most people find it easier to "play" when the board is orientated how it would be if you sat down at this position in real life and were told to find black's move.

When you leave your king out in the open, any move that attacks or threatens to attack your king forces you to play reactionary moves and allows your opponent to get you to do what you want as they have the initiative. It also allows you to walk into forks.

Beyond the fact that you're going to end up playing reactionary, defensive chess and also potentially running into forks, you also have plain checkmating attacks to worry about. When you castle your pawns do a really good job of defending your king from forks, checking attacks, forced moves, etc. as the pawns both block bishops along the diagonal and defend all three squares in front of your king along the 3rd rank, preventing him from dropping a knight there.

Castling also allows you to connect your two rooks, allowing them to defend one another or double up on the same file, which is better than having them isolated on either side of your king where they're both weaker and can potentially run into a skewer.
