It takes like ~20 hits to get Owl down to the point where posture damage sticks. If you're parrying his attacks, dodging the periless prompts, and punishing his openings, how could you NOT beat that fight? Just parry / dodge and don't get greedy. It's the same formula as every From game.

This isn't a good way to try to discern translation, because Japanese is at base Subject-Object-Verb and English is SVO.

He does sweeps now, he has an elbow move mid-sword combo that always signals his firecracker slash, and every once in awhile he'll throw firecrackers to fuck with you that, depending on your range, lead into either his regular sword combo or his shuriken dash in move. He also has two delayed swings and an overhead slam that takes a month to build, but those are piss easy to deal with.

Do you think that foreign languages just are just English sentences that had each individual word replaced with a foreign one? That's not how it works. The structure of Japanese language is completely different. The way that you specify what the subject of a sentence is is different, along with a lot of other details. If you tried to keep every "word" in the same place and just translate the individual words you would get gibberish that's completely meaningless.

I realize that cultures have a typical default sentence structure, but I feel that it should be recognized as different and accepted, played normal, not changed for some weird affect that completely stunts line delivery. If absolutely nothing else, saying someone's name at the end of a sentence isn't weird at all. It's not only totally normal, but the change in delivery flavors the sentence.
