Starkiller was special since birth, was trained by Vader, could unleash his powers without holding back by Jedi rules or anything after ditching the empire.

This new dude looks like a regular Jedi trainee, who's been on the run and not training and using his powers, he's bound to be rusty and weak, maybe through out the game he becomes more powerful but it makes sense for him to struggle, and it's good for his character.

I think this is less of a fault of the game, and more of a divergence of what people may have wanted from the series. It does kind of sell itself badly, being a game that might have lured in with exploration and then became "chosen protagonist vs an ancient evil" (which is cliched now, but wasn't so much 10 years ago).
