Valkyrie Profile, Star Ocean 1-2, Tactics/Ogre Battle, a few Tales games, Shiren, Radiant Historia.
Sega is actually really good on this department, their protags are almost all adults. Shining Force, Phantasy Star, Yakuza, and Valkyria Chronicles, well, if you count the ones that matter. The RPGs they had which had a teen doesn't devolve into teen drama and coming-of-age theme, either.

By the end of the game he's still physically only 20. He starts arc 2 at 16 years old and is 20 by the time he's married and reaches Gotha. After getting stoned by rapehorse and his kids grow up without him, he's 28 at the end but only chronologically.

Overlord Zetta from Makai Kingdom. I don't think his age in human years is ever explicitly mentioned but he says he's well over 30,000 years old. If I could put it to numbers I'd say he's anywhere from late 30s to early 40s personality wise. Even gets a kid later which starts his new character arc as a dad.

Not everyone wants to self insert when they read a story, having a memorable main character can do wonders for a game.

I guy from 10 - 30 is going to undergo radical changes both mentally and physically (usually for the better) compared to a guy from 40-60. Youth just holds way more possibilities compared to the aged

Sure, you're going by boat, but at most, you're travelling by boat to get the helmet and then to your mom's hometown, at which point you get a fucking FLYING CARPET. At that point, shit's solved within 2 weeks at most.

Why would this surprise you considering the rest of the series? Celes in FF6 for example is a high-ranking general...who is 18 years old. Balthier was appointed as a judge at the age of 16.

Japanese aging conventions are fucked, it feels like they just assign all their protagonists an an age between 14 and 19 at random.

I can see why you might call him bland, Stocke is written as being competent, calm and mature which aren't exactly bombastic personality traits. It's not really about having wisdom to impart per se (which I would say he does, he's a pretty knowledgeable and competent spy even at level 1) but rather the general calming effect that happens to people after exiting young adulthood.
I'd say Stocke acts like someone in their late 20's far more than someone in their late teens.
