Not a book but there's a HOI4 mod called The New Order based on this idea and it feels far more realistic than anything else I've seen, albeit with some fantastical elements.
The Axis states generally dominate the world except for the Americas but encounter pretty severe economic stagnation. Generalplan Ost kind of worked but not fully, so you have a bunch of Axis-appointed rulers trying to manage the remaining pissed off Slavs and their states are really tense an inefficient. There's an ideological divide between regular Nazis and esoteric Nazis that's also pretty cool.

It mostly plays out like a visual novel because there's so much lore and reading, so it's semi-related I guess.

The point is the very thing described here was actually done to the east and west Prussians, Silesians, Pommeranians and partly the Sudetengermans.

You can find countless historical works and writing about acts of violence by other countries. No serious historian denies that pretty much every country in ww2 committed war crimes. Nazis get a lot of attention because of the sheer scale of their crimes.
