Its the story of ronin who appears in a small town. The inhabitants of this town are wary; they seem to sense that the ronin has a sordid past. The neighborhood cats think he smells of blood. The ronin decides to stay and gives up his blade, replacing it with a simple bamboo sword. He befriends a child in the village and decides to settle down as a school teacher. And of course, as these stories go, this wont last forever. Trouble seems to follow the ronin.

That's not true at all. Shonen literally means it's published in shonen jump/sunday/etc. Hunter x Hunter is published in Jump, so it's every bit as Shonen as Dragon Ball. It has nothing to do with the story's content.

Shonen is a publishing demographic which means "primarily young boys, secondarily older guys". Of course businessmen on trains read one piece. But seinen means marketed primarily towards people who are at least in their last years of highschool.

Not true. Shonen means it's published in shonen magazines. Plenty of manga, like AoT, Berserk (barring certain sections), or Jojo could easily get away with being published in either. And if they were somehow published in both simultaniously, they'd be both shonen and seinen.
