The memory manipulation thing was bullshit too, but for some reason I've come to accept it. Now we have time spanning memory manipulation but there's probably more to it, I'm reserving my judgment on that until we get more chapters.

Yeah that's because his projection magic comes from his "reality marble". Regular "gradation air" magic makes an object appear for a few minutes at best, is very degraded, and disappears quickly as the world is constantly "correcting inconsistencies" like projected items.
Reality Marbles are different. Shirou isn't doing regular projection, he's literally pulling weapons out of his mindscape.

Saber trains his body.
Rin trains his mind.
Archer trains his soul.

Calling Archer's talks "training" may be generous but he really boosts Shirou's development by telling him the exact thing he needs to hear. He gives him the only advice that's actually useful in the long run, meanwhile Saber and Rin's training just make him taste defeat and failure repeatedly.
