Okay well, the first movie is basically a fantastic remake of the first six episodes. Very true to the original but completely modernized. Only has a few, almost ''easter egg''-tier details changed about it. Whether or not you liked early NGE, you're going to like this. The second is where things take a turn, it's still familiar but tons of small plot details are changed, making it feel extremely different. It does this until the ending where you basically get the big twist. I haven't seen the third one in a while but ti feels really grey. Slow, melancholic but kind of pretty. I don't know sorry for writing this. I'm really fucking high right now and I feel like a professor.

There are many differences some minor some major, some theorize they are actually sequels to the original series and EoE.

no, EoE has no relevance to rebuild as of yet.

There's also a LOT more of EVA content in forms of video games, light novels, manga and so on.
For example NGE Anima is currently releasing in america and europe, it's a light novel series in which episode 25 and 26 never happened and Shinji stopped the third impact.
There's Neon Genesis Evangelion 2 for the PS2/PSP which is an incredibly huge life simulator game that lets you play as over a dozen characters, each with their own storyline. Also has additional information about the originals series in form of secret files.
