Sometimes you need bad shit to happen to your characters or there's no story.
She herself once tried to escape, why is it so weird for her to know the ways they could try to escape?

No problem if it's beliveable. Her backstory, her mom role and inteligence justify it.
It's called not being an autist and being able to deduce when someone is acting shifty from their actions or behavior. We even have entire fields of science about studying people's behaviors especially when they're trying to hide major secrets etc. It's not magic, though I suppose it may seem like so to people who can't into emotions or think they have superior poker face.
That's really the only thing that really bothered me about Promised Neverland other than the pacing feeling glacial in the middle.
