swords are pretty disadvantaged against Pole weapons, they are best when used against other swords. also a quarterstaff thrust hurts a lot and unless you have a greatsword cutting through the staff is impossible.

A sword is not a fucking lightsaber, it's not going to just slice through a quarterstaff like metal, especially if the staff is metal, which they often were (Or at least reinforced with.).
If the guy with the staff is more skilled, let me give you a rundown of what might happen:

So, getting hit with the staff is definitely less lethal than getting hit with the sword, but deadliness =/= effectiveness, necessarily. If the guy is fucking down, it doesn't matter whether or not he's a corpse.

The sword was actually mostly a secondary weapon. Lances, halberds, polearms in general, dominated the battlefield. The staff basically use the same principle, it just lack the metal end.

He would not even have the oportunity to reach the staff user. Quarterstaffs can also be grabbed at the end for vicious extremely long range blows.
Range is the reason humans invariably used spears in combat, it is literally game winning being able to hurt others without risking getting hurt.

Well, you can cause significant damage to a spear on a lucky day, but staffs are a lot thicker as they are designed for hitting the opponent with the wooden part so it would be pretty silly of them to break down that easily.

Even in modern warfare the point is not to kill people, it's just to neutralize them. For example, we use 5.56 rounds which are statistically less lethal than bigger rounds (Don't get me wrong, it'll kill a bastard, just not as surely as 7.62), partly because if we just wound someone his buddies might stop fighting briefly to drag him to safety. Two guys doing that basically means you knocked out three for the price of one and technically you haven't killed anyone unless the dude succumbs to his wounds. And besides that, there's no actual point to killing someone when just dropping them would do the job fine.
Real life does not work like Shonen logic where everyone needs to be spared, but it also does not work on what you THINK is "realistic" logic where everyone needs to be dead. Actually evil main bad guys need to be finished off to be sure, but some mook from a random village with his little metal helmet and brigandine is not some evil savage who really needs to be finished off though. Thinking everyone needs to be purged is also anime logic, just edgy bullshit instead of friendship is magic bullshit.
I agree, I was just trying to illustrate why sheer killing power was not the end-all be-all for a weapon.

They were designed to break enemy formations not the weapons themselves. Chopping through solid hardwood requires a lot of force that you just can't apply with someone wielding it due to the give you would get if you hit someone with a 2kg piece of metal.

This is correct. A bunch of dudes with big swords would use them to parry pikes and get past their effective range, at which point they held the range advantage even if the pikemen dropped their pikes and drew their sidearms.
Another neat fact about pikes is that pike squares were surprisingly arrow-proof, because of how densely the pikes were packed arrows stood a good chance of striking a pike instead of a body. They weren't invulnerable by any means, but discipline and good helmets went a long way.
