As far as VN's go, definitely Fate.
Better music, voice acting, visuals, animation, action, more interest story developments...
The only thing I'll give Tsukihime is that it is more complex and serious.
But I'd rather have some cool action scenes with sounds of weapons clashing, and to have more than 10 different audio tracks is nice too.
