I think he came to the realization that someone had to suffer the realities of the world. He did all those horrible things because he believed that sacrificing his own soul and happiness was worth it if nobody else had to suffer.
It was a twisted and ultimately failed ideal, the main reason EMIYA hated every spectrum of it so much. He realized that the world was a terrible place and no single man could ever change that, but he was so determined to keep trying, because giving up was worse than failing , that he polluted himself into bitterness.
People might shit on fate, but I think it brings up some pretty cool points every know and then
