You should know th Hebrew bible isn't only the Torah, there are also the prophecies and various others books of the old testament.
You should give a try to the liturgy, particularly the one recited at Yom Kipur, it's beautiful at times (however the rythm and scansion tend to be pretty different from Western poetry). If you can heard it recited by some North African or Middle Eastern or Eastern European oldfag it's even better.
There's a great variety of texts and melodies.
You can also dive into the hermeneutic and canonical literature (Talmud, Choulhan Aroukh, etc.) But that could take decades to study so ask the closest rabbi on advice on the most accessible topics.
