Why didn't they stick with this Thanos design for Endgame? it's less juvenile and more intelect driven instead of the simpleton hulky power fantasy embarassment they decided to go with.

Because they needed him to do action scenes. It could also probably just come down to how much Josh Brolin could do in it.

In that movie he is only partially shown. We only see his hand and his face.

To make big, imposing and almost impossible to beat.
You know, like in the comics.
He's a big guy in the comics as well.
Hulk sized actually.

You might say he's a power fantasy because he has so many strengths, but Thanos is physically imposing partially BECAUSE he's intelligent. He used his knowledge of science to biologically and cybernetically enhance his own strength, durability, and powers. This isn't explicitly stated in the movie, but given his work on Gamora and Nebula, it's highly likely this is still the case in the MCU. If you're going to have Thanos be a truly intelligent character, it stands to reason that he's still going to shore up any possible weakness, and give himself every possible advantage.
