It's because it's the only show on tv that's both a) largely script driven, and b) prioritizes accuracy to the storyboards over being on-model. The artists get to do what they've always wanted to do but haven't been able to; spend a lot of time on drawings that will actually make it to the screen relatively unaltered.
The earlier seasons and the later seasons are produced the exact same way, the only difference is that the industry surrounding it went to shit. The artists have no restraint because they never had the opportunity to learn it on any of the other shows out there

Actually, the change to script driven didn't even happen until fairly recently, with it happening only a few years back. Before then it was storyboard driven
Ever notice how in the credits of older eps, there would be a couple of board directors/artists on each episode and a few of them would also be credited for the writing? These days each episode only has one writer and a different board director
