I don't know if gridiron was ever played the way you say, but I played it in the states at NCAA level and everything was about reads. Occasionally there would be a designed blitz or man assignment but 90% of the time each "play" was just a different set of conditions by which you were supposed to make a snap reaction. A lot of it was contingent on your teammates, like if a 3T saw a front that meant he had to stunt the mike would then have to take over his duty of reacting to the pulling guard to cover the A or B gap.

That's just one play and one condition, you're expected to memorize dozens of these to the point where it's muscle memory.

American football is unlikely to survive the next generation. My boy refuses to play it, won't watch it, and is beginning to have second thoughts about lacrosse(!) and hockey(!).

Incidentally he does play soccer (and baseball and basketball).

Soccer is all my girls will play. Literally all they will play.
