The sport is too volatile. It's too easy for an elite fighter to take a few losses and vanish into obscurity. It takes years for an athlete to develop into a star, but nobody in MMA stays at the top for that long. I look at the list of current UFC champions and I see Cormier (cornball default "champion" with no appeal), Jones (unmarketable due to his steroid use and awful personality) and a bunch of literally whos that look like cholo gangbangers and Russian construction workers.

Well for one it's really not, it's expanding into new markets constantly and achieving a global presence, but it certainly has peaked in the US with Conor. For one, people don't understand what they're looking at. The best fighters a decade ago had somewhat crowd-pleasing styles that are easy enough for the casual viewer to understand. The sport has progressed skill-wise, especially in the lighter divisions, to the point where the stars of the past like Liddell, Couture, Penn, Hughes, etc. couldn't crack the top 15 even in their prime. People shit on fighters like Usman, Colby, Khabib, etc. for boring wrestlefucking but its the meta and a way to win fights. The requisite skill needed to combat that meta wasn't there years ago, and isn't accessible to the population at large. A leg-triangle, wrist-control ride that Khabib likes to do is obviously very technical and difficult to achieve, yet to the average viewer it just looks like he's laying on them.

Its because people don't want to reinvest in a new fighter once they disappear, whereas in team sports, you support the team and the players that play for them. Obviously you've got people who'll support whoevers doing well, the casuals who'll support whoevers winning, but they're only there for the big fights.
Also lack of effective culmination. There's no superbowl in mma, only title fights, and they've become diluted with interim belts, and the fact that it can be disputed veryu easilt as to whether someone even deserves the belt.
This all results in people not following the sport that closely, and its eventual demise when they don't have their Tyson's and Ali's in guys like Jones and McGregor.
