I'm no Bavarian, but I'll try. You probably know that it's Bavarian for "We are us/ourselves".
Most people would define it as "the drive to be the best at almost all costs while staying true to yourself". Bavaria has a vivid culture on its own and Bayern is keen on representing that. At the same time, they are a modern club that wants to dominate world football. Many people would also say that it's dependent on how well you "fit" there, but that alone is pretty complicated. I guess it's almost impossible to explain, especially (for me) in English. I guess every true supporter of them has their own definition, it's about sticking together.

I don't really know why they gave, for example, Ten Hag a thumbs up and Lopetegui a thumbs down.

By the way, I'm far from being a fan of them.
Maybe a real Bavarian and Bayern fan can explain better.

There is no other top tier club that respects its players as much as Buyem does. Even the biggest haters tend to acknowledge that. But I guess it's easier to tolerate criminals such as Ribery and Breno or alcoholics like Gerd Mueller when the people who run the club are convicted criminals themselves.
