I think it's not a difference in power or mmagays being too terrible at defense, it's probably because it's harder to block shots when you basically don't have gloves, and slick lowering your head movement gets your head kneed or kicked off, so they don't have many options for defending punches.
Also the fact that smaller gloves concentrate your power into a smaller impact point and if that lands right on the chin, even if it's lesser power, it rocks you more.

If you bothered to watch the parker fight he didn't go for the KO once he was fighting a calculated fight on the outside most of the time. Not once did he lunge in looking to take Parker out. Also the shit ref (who the Parker team brought in) kept breaking up the fight when they had a chance to fight on the inside which is one of Joshua's strengths. That left right uppercut he throws is one of his signature moves.
Povetkin also has a great chin not even Klitschko could KO him and nobody before the Joshua fight was expecting a KO like that. Parker's defence wasn't even as good as Kilitschos in their fight which was actually a very good performance from him and probably would have dominated most other boxers in the division. Joshua got gassed because he went for it too hard in the 6th and looked for the KO. That's his benchmark performance. In the parker fight you could see the attitude he had and the adjustments he had made between the two fights he never tried to over commit at any point in the fight and it was a comprehensive break down domination of parker. You could easily see how he was learning in the ring even with the povetkin fight there were times when he was getting out of his comfort zone yet he didnt over commit and only went for povetkin after he broke him down and caught him and knew povetkin didn't stand a chance. It was a clinical finish as well not some wilder windmill ending. People love to ignore Joshua's technical ability and call him a big heavy puncher with nothing else but he has proven time and time again he can outbox and eventually KO top ranked opponents. I don't even think he's the best HW in the division but I can say for sure that he will expose usyk.

We can go around in circles about Fury and Joshua against Klitschko yet that doesn't change anything. Klitschko performed admirably well against Joshua he looked almost world class with his movement, jab and defence that night and it doesn't matter if you believe he was past it or not he still put up one hell of a fight and it was a big challenge for Joshua and he came through it. If anything all a comparison shows is how superior Fury is considering the fact Wlad couldn't (or decided not to for whatever reason) barely throw a punch or land anything because of Furys awkward style and head movement.
