It's boring because it's repetitive and monotonous. It doesn't tell a story and doesn't go anywhere, it just stays locked in meandering modal progressions. Jazz music is melodic and rhythmic ornamentation and improv. over a very simplistic musical idea. How many great jazz compositions can people name? Even at it's peak the music was completely forgettable with few exceptions.

The average laymen can name classical pieces that are hundreds of years old or at least recognize them, because they're memorable pieces of music. Great compositions get ingrained in your mind on the first listen, it's a natural effect if you're human. You don't have to "get it" or "understand it", it takes no effort on your part, it's a universal feeling that transcends cultures regardless of musical complexity.

They can recognize them because they're spammed on television. And you don't seem to understand that jazz was popular music for decades; the masses were eating it up. People with no special musical knowledge were going to dance halls and connecting with the music instantly.

They recognize those pieces because of the institutional support they receive. You don't really learn about Coltrane or Charlie Parker in elementary school but you do about great western composers. But to answer your question, I think Ugestu by Art Blakey's Jazz Messengers has great composing and in that vein a lot of Wayne Shorter's 60's albums are amazing.

Also unironically Coltrane's 60's era stuff like crescent and a love supreme. The compositions themselves are modal and simple but I think that is besides the point which is the story the improv tells
