As I understand it math rock is music that has relatively light melodies with counterpoint heavy sections. Lots of time signature changes are what helps define math rock. I think it's a combo of prog rock and Midwestern emo like people are saying. But it also has a lot of polyrythms, guitar tapping, and complex chord structures. When I think of math rock the best examples I can think of are Girraffes?Girraffes!, Floral, Chon (at times), Toe, The Physics House Band, and Tricot. G?G! is a fav of mine. American Football never sounded like math rock to me but Don Cab does. Hope this helps clear some things up frens
