Very few amp demos are good on YT. Very few people dial things in right. Every boomer dials a Mesa in like a Marshall and wonder why it sounds muddy since you on those amps you actually cut the bass more as you clip them for example. If you're trying to 'research' amps I'd suggest going to a store and just plugging into a bunch to see how they sound with your stuff.
None of them are good because it's always mic'd, every cab is different ,and then the already mastered audio is compressed to hell.

As the name suggests, i played (well really forced to play) the violin for 10+ years, and switched to guitar over a year ago.
I know how to do the basic open and barred chords, and a couple of more fancy ones like Maj79 and stuff.
But I dont "get" where a lot of notes are on the fretboard, even tho I know how to quickly play major, minor and blues scales. Everytime I improvise, it sounds like shitty classical music, not rock or anything fun. Also my vibrato sounds like dogshit, I just hate the way it sounds on the higher strings, going UP then down, rather than down than up.
Any tips?

Unfortunately the guitar isn't laid out all that logically so you'll have to spend a lot of time to learn where the notes are. You can of course find ways of making it easier, but ultimately you have to come up with your own memory methods. For me I found learning intervals and more theory stuff more for learning the notes, in addition doing ear training stuff helped a lot too. You'll have to experiment with stuff to figure out what works for you, its open ended, etc. If you want to sound more like rock music, you'll probably want to learn the pentatonic shapes and scales more as they're common in rock. The blues scale is as well and if you already know that scale, you basically know your pentatonics. Another suggestion would be to play whatever scale in whatever key you want to play in to learn to play it on a single string, play it across all 6 strings, play it on 2 strings, etc (this is how I do it, not everyone does it this way).
The vibrato stuff is a lot different on guitar than violin. Some players have a violin-like vibrato like Malmsteen. This all takes time to develop and you can bend/vibrato lots of different ways. Just study more players and you'll pick up on it, it sounds like you're just more used to violin.

You have to shake the piss out of it. I also find increasing the vibe on a tone before the next phrase pulls your riffs together. You can shake side-to-side but the vibe won't be as exaggerated.

If I move outside, I'm just guessing. So learning to play chords on the scale helps me find notes outside of what I know. A major scale for example is maj-min-min-maj-maj-min-diminished-maj

I've got a technique that works for me—I press my barre finger into the strings on the side of my finger rather than the flat front. Is that weird? Will it affect my tonality? Right now it's the only way I can get anywhere close to consistently covering the D string all the way.

Yeah those Firebirds are garbage. Still probably better than the crappy Strat copies that are in most music schools. Overall, depends on the Gibson. Latest one I played was a modern Studio, and yeah it was junk. Also played a '57 reissue which was kind of a boat anchor and unimpressive and a vintage ES-125/150 (forget) which was only OK.
Good ones: 80s 335 which was beautiful, 50s LP Junior which was pure rock, 50s ES-175 which was very cool but not worth the 5k+ they were asking, and 90s Super 400 which was everything I imagined. They have made really magic guitars but have lost their way.

Played one a couple weeks back. Really great amp and simple to dial in. I would personally go for the new 100 model, the bigger output transformer and headroom is worth it. It takes pedals really well though, it has a Fender like tone stack but the bass stays really clear on it. It also sounds best at low volume cause of the attenuator it has. Watch the Andy Timmons video he uses a bunch of pedals with it.

Depends on what kind of heavy. I own one, I play mostly noise rock(for which I am getting JM or Tele soon-ish) post-hardcore and stoner doom. It's perfect for doom, you might want to replace the pickup eventually, but my G400 is well built and just feels right. The specs are same as on Nigson, for fraction of price. If you like the sound of Gibson pickups, I suggest shilling a 100$ extra for G400 Pro, otherwise just get standard G400 and whatever pickups you like

High wattage tube amps aren't loud when played clean, they just have a lot of headroom. They're only loud if you're going for natural overdrive, especially if it's a vintage style volume-only amp.
If you just do cleans and use pedals a 100w is fine and will sound great due to the headroom. I have a 15w amp that's nearly impossible to play clean at any decent volume (louder than the gutiar itself) because it has so little headroom.

You obviously haven't plugged into a large amp at bedroom volume. They don't get blaring loud like you think they do. High end amps have way better volume controls and circuitry than a Blues Junior. Go look up a Bogner or Mesa, they all sound great at low volumes even the 100W heads
100w tubes are fine for playing at home and people have been doing it for 50 years. Turn it down, it still sounds fine. Sounding fine turned down is a characteristic of a 100w tube amp.
