it didn't use to be exactly metronomic nor it had a perfect compression, and this variations result of human limitations is what gave it its groove and general feeling of punchyness, what made it sound "real"
for example, take a strings quartet performance and set its average bpm, then try and edit it to be aligned perfectly to the grid and compress it in order to make it as loud as possible without distorting while making it lose most of its dynamic range
the result is going to suck ass so much that it would probably be rendered unmusical
