Because it's better than jazz recorded prior to 2000.
Humans are constantly evolving and learning from what came before them. Jazz made today is miles ahead of jazz made in the prior century, (though only because contemporary jazz musicians are standing on the shoulders of giants, of course.)

Not to mention the better recording and mixing available today

I have no idea how you can think it's a linear thing, are you from the 19th century? you think free jazz wan't a thing 150 years ago because the artists weren't smart or creative enough?

hilariously wrong. jazz peaked in the 60s and there's nothing wrong with acknowledging that. of course there's good stuff coming out now but the legendary visionaries mostly lived during that time frame and there's no one comparable now.
