This literally only applies to the broadest fields. It doesn't take 10,000 hours to become good at making webcomics, but learning to draw probably does in the grand scheme of things.
Same thing with consolidated projects. It won't take 10,000 hours to become good at game design, but forming a team and combining all the manhours to make it happen, that easily adds up to possibly well over 10,000 hours.
With music, it most certainly takes well over 10,000 hours to understand and become a patrician

The key word is “master.” Assuming you took this incredibly serious and spent a full 10000 hours on guitar, by the time you were done, you’d be proficient in every style (rock, jazz, classical, etc.) you’d totally understand the theory behind it, you’d be able to play in non standard tunings with ease; you’d know the differences between all the different types, with an understanding of how different builds, wood types, and string types can affect the sound, and so on. You’d be a MASTER at guitar
However, you’d be pretty good long before the 10000 hours are up. I can’t think of a guitarist that started after the 10000 hours
