This plus throw in Joe's Garage. If you like his solos there are plenty of albums of just that. Uncle Meat should be required listening for everyone.

Weasels and jazz from hell

What about Sheik Yerbouti? That seems to be one of his most popular albums.

It has some good songs, doesn't stand up to his masterpieces though. Still worth listening to, but not that necessary until you're already a fan.

The answer is always that you're probably listening to the wrong album. He has a bunch of wildly different stuff; prog rock, jazz fusion, classical, doo-wop, "comedy"

I just listed off his classic albums that everyone knows. Just because he has a lot of albums that define his career doesn't mean that one is more important to his artistic vision than another. If you just want a bit of everything smashed into an album, listen to Uncle Meat, Burnt Weeny Sandwich, or Weasles Ripped My Flesh. You won't know a lot of his classic songs, but you'll get an idea of the kind of thing he is known for.
