I have never given rap a fair chance. I'm primarily into post-punk, but lately I've been thinking about giving hip-hop a chance. I'm thinking of attacking the genre in order, and only listening to albums that I'm interested in. I'm thinking of the following order.
Rapper's Delight (1979) The Message (1982) Run DMC (1984) The 2 Live Crew Is What We Are (1986) Paid In Full (1987) Yo! Bumrush The Show (1987) Straight Outta Compton (1988) Low End Theory (1991) Bizarre Ride II (1992) Enter The 36 Chambers (1993) Doggystyle (1993) Ready To Die (1994) Liquid Swords (1995)
What do you think? Is this a good overview of the genre? I stopped at 1995 because don't really give a shit about anything after that.

If you miss Quasimoto’s The Unseen you are missing the best the genre has to offer, bar none. I am mostly ambivalent to notable hip hop “classics” but that album is a fucking masterpiece imo
Ayden Johnson
How the fuck are you gonna leave out Illmatic?
Thomas Russell
Too old school for my tastes
Brayden Jackson

All of my favorite bands are from the 60s to the 80s. Anything past the mid 90s is too new for me.

You need some more Beastie Boys, De La Soul, and Public Enemy. Listen to their first 4 albums and stop after. But you want the absolute essentials only. Listen to It Takes a Nation of Millions, 3 Feet High & Risinf Paul’s Boutique, and Fear Of A Black Planet.
I definitely understand the lack of interest in anything post 90's but Mm.. Food and Madvillainy are pretty fantastic albums very much in the same vein as as much of the earlier hip-hop.
