Does any popular artist / band actually write their own music?
I have absolutely nothing to back this up but I feel like fame / popularity is one of the things money can't buy, so once an artist / band gets famous their manager is going to want to ride it out for as long as possible so there's not a chance that he's going to risk letting them write their own shitty music.
I feel like every famous band basically just becomes a shell that plays live, with managers and songwriters pulling all the strings. Hell, there's no reason the actual band even needs to be playing on their records, why not just hire some top class musicians to record all the parts and then just get the singer to sing over the top?

There are elements of music theory that you can incorporate into your music so it matches currently trending and popular musical elements, I think most big musicians are tempted to add more of these as they get big so they have more widespread appeal, and the record company is probably happy to assist with this aspect, but otherwise I think most of these decisions are left up to the artist with ocassional check ins with company staff to make sure an album is released per contract agreements
