Theory isn't just reading music. Literally everyone who plays or listens to music regularly knows some theory deep inside, they just might not know the terminology of how to transcribe it into coherent thoughts or music.

This is interesting, from what I've seen there's always been a belief that freddy was a trained classical pianist, though it's probably just a rumor from those impressed with his piano playing, but it is not the case. It's seem like Freddy was acquainted with the basics of theory, but didn't know it beyond what he learned in introductory piano lessons.
But, he was a working musician, so through working with other musicians and composing music he picked up what was enough to be a pop song writer. And he did very good despite not doing extensive study of theory, see this analysis of bohemian rhapsody for some insight into the composition decisions he made. But most of it was not rooted in theory, but Freddys intuition and playing around with chords and modulation
