Typically, it's done as a cost saving measure. Particle board provides pretty decent insulation for a fairly low cost. It's usually combined with foam insulation though. More modern builds have been moving towards UV dried, aerated concrete for similar reasons, particularly in areas where tornadoes are likely or areas that are likely to have a high local humidity.

I’ve never seen a proper brick home. All of them only have brick veneer with wood construction underneath. Commercial buildings on the other hand are typically block construction and brick may be used as a facade

And technically air is the insulating part in foams/wools as well - foam/wool's purpose is to trap air and prevent it from mixing freely - that way it's more effective at insulating.

No it’s just impractical in the majority of North American climate to own a house for that long. Where a lot of people live the weather is very harsh and there needs to be a balance struck between a house that will consume less energy over time vs a house that will last long enough to become outdated due to changing technology.

Wood is cheaper here... and we can get more insulation into a wall than your stone walls which end up twice as thick. Most of us don't care if our house is falling in 50 years from now.
