Modest Mouse, from This Is a Long Drive to The Moon and Antarctica. You can take or leave everything else they've done after, but the progression and the consistency of those three records is fantastic.
Unironically Blink-182, early stuff is insanely crude so it's cool to see the evolution into a radio-friendly sound

Beach Boys, kinda. You don't need to listen to all of their early surf rock, but going chronologically from 64' onwards (including unreleased albums and skipping bullshit like their Christmas album and Party) is the best way to really understand most of their later material. At the very least, go chronologically from Pet Sounds.
