Country is fucking DEAD. The best country band I've heard in years is First Aid Kit and they're Swedes.
I would start with the bluegrass / early country. Carter Family, Doc Watson, Charlie Poole. Most of even the "classic country" is too poppy for me and mostly sounds like the pop of its day just like modern country does.
For country that isn't bluegrass but it's less poppy, Merle Haggard, Waylon Jennings... Commander Cody

It is (or was) a pretty broad genre, so there are many good entries.
Townes Van Zandt, Guy Clark, and Gram Parsons could be pretty accessible if you like folk or more bluesy acoustic rock.
Check out the album Wayfaring Strangers: Cosmic American Music for some more psychedelic country.
Willie is easy to get into at most any stage, but maybe try Redheaded Stranger or his album with Waylon Jennings.
All three Hank Williams are varying levels of good to great and varying levels of accessible.
As for contemporaries, though there are few good ones, you could check out Colter Wall, Sturgill Simpson (slowly becoming less country and more his own thing), Jamey Johnson, and maybe Chris Stapleton.
It's a fantastic genre once you get into it. You just learn to ignore the absolute trash that makes up most of the modern artists
It's more of a singles genre then an album genre, at least the early golden days before it turned to shit.

These guys suck, don’t listen to them OP. Hippie country. Listen to Hank Williams, Carter Family etc. also get into what’s called old-time music, which is basically pre-country&western. Dillard Chandler, Ernest Stoneman, Art Stamper are all good and many others like them. Lots of fiddle tunes, gospel and whatnot. But don’t listen to Alabama. Seriously.
